My favorite Gluten Free Cookies

Monster Cookies
1/2 c. Butter, softened

1 c. sugar

1 c. firmly packed light brown sugar

3 eggs

2 c. peanut butter

1/4 tsp vanilla extract

4 1/2 c. regular oats, uncooked

2 tsp baking soda

1/4 tsp salt

6 oz peanut butter chips

6 oz milk chocolate chips

6 oz semi-sweet chocolate chips


Cream butter, gradually adding sugar. Beat well at a medium speed. Add eggs one at a time. Then add peanut butter and vanilla and beat well. Add oats, soda and salt. Stir well. Stir in remaining ingredients. The dough will be stiff

Use a larger cookie scooper or a 1/4 cup size measuring cup. Drop the cookies 4 inches apart on a lightly greased cookie sheet

bake at 350 for 12-15 min. The centers should be slightly soft. Cool slightly on cookie sheets then remove to a wire rack and cool completely.


P.S. The different types of chips can be changed with small pieces of candy bar or M&M’s. I have tried small pieces of snickers, M&M’s and semi-sweet chocolate chips and it was a super yummy combinations!!
