Lemon Poppy Seed Muffins

These muffins are a family favorite. Like I have mentioned before I have changed the recipe a little to be more friendly for our family diet. James and Adam are big fans of these muffins and Adam described them as tasting like the Swedish cookies he ate growing up. I will take that as a compliment! Let me know what you think!

Lemon Poppy Seed Muffins


  • 3/4 C. Butter
  • 1 1/2 C. Granulated Sugar
  • 3 eggs
  • 1 tsp Almond Extract
  • zest of 3 lemons
  • Juice of 3 lemons
  • 3/4 tsp Salt
  • 4 1/2 tsp Baking Powder
  • 3 C. All purpose flour
  • 1 1/2 C. Almond milk


  1. Combine Flour baking powder and salt into a bowl and set aside. In a separate bowl mix butter and sugar until creamed. Add eggs one at a time, then add almond extract, lemon zest and lemon juice. Add dry ingredients to butter mixture. Then add Almond milk. Mix until smooth.
  2. Bake at 350 for 18-20 min.
