2 cups of uncooked rice
4 cups of water
1 1/2 Avocado
1/4 cup chopped cilantro
dash-1/4 tsp cumin
Lemon zest and juice from half a lemon
1 clove of garlic
salt and pepper to taste
Cook rice according to package (I use a rice cooker) with a 3 finger pinch of salt in the 4 cups of water. while rice is cooking combine remaining ingredients and mash and mix. Once rice is done cooking throw it into the avocado mixture. Serve warm or at room temperature. So delicious!!
my husband does not like Cilantro at all and he really enjoyed this recipe and even went back for seconds. I found myself eating spoonfuls of it while putting the left overs away and I was super full from dinner. I could not stop eating it!
