Ingredients
1 1/2 cups all-purpose flour
2 tablespoons packed brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1 egg
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
2 brown-spotted bananas, mashed (about 1 cup)
1/4-1/2 cup mini choc chips (optional)
Directions
Combine dry ingredients in a bowl and blend well. Flour, brown sugar, baking powder, salt, and cinnamon. In a separate bowl combine milk, egg, oil, vanilla and mashed bananas. Add about half of the dry ingredients to the wet and mix until it is mostly incorporated and then mix in remaining dry ingredients. Batter will be thick. I use an electric griddle and the sweet spot for mine tends to be at 350 degrees. You will want to make sure you get these pancakes more brown than a light gold because the batter is so think having it get to the darker color will insure that your pancakes are cooked all the way through. This will not dry them out or anything. They were still very soft and fluffy. My kids topped theirs with peanut butter and syrup (a family favorite!). I also really liked raspberry Jam on mine and our littlest loved them plain. Try them out and tell me what you think!
